- Finely chop all vegetables.



- Boil potatoes, mash them, and keep them aside.

- In a moderately heated pan, add butter, add cumin seeds and allow to crackle, then add chopped onion and sauté till translucent.


- Now add ginger garlic paste and sauté till rawness goes off. Then add all veggies except tomato, and cabbage.
Sauté for 4-5 minutes by adding salt.
- Now add chopped capsicum + cabbage and sauté for 2-3 minutes.

- Now add all spices and mix well, stir fry for 4-5 minutes till spices release oil. During this stage, mash veggies as much as possible. I prefer chunky, so mashed lightly.

- Now add tomatoes, mix well and sauté for 2-3 minutes.


- Now add mashed potato and mix well.

- Now add warm water as per requirement (preferred gravy consistency) and cook/simmer for 3-4 minutes. Add chopped coriander and mix well.

- Lastly, add lemon juice + butter, mix well and bhaji is ready.

- Toast pav in sufficient butter by adding pav bhaji masala, toast nicely, and serve with bhaji along with finely chopped onion and lemon pieces.
