Coloured Sooji Halwa

- Boil chopped beetroot in 1/2 cup + 2 tbsp water + salt + sugar. Boil for 10 - 12 minutes till water evaporates to some extent and let it cool.

- Make a smooth fine paste of the cooked and cooled beetroot.
- Assemble all other ingredients

- Now in moderate heated pan, add 2-3 tbsp oil, put bay leaf + cardamom, sauté for few seconds then add sooji. Sauté for 2-3 minutes.


- Add warm water, mix well and stir continuously so that lumps do not form. Now add sugar and mix nicely till water evaporates and sooji gets cooked.


- Add 3-4 tbsp beetroot paste, mix well and simmer for 2-3 minutes till sooji gets coloured well with the paste.


- Lastly add ghee and mix well. Now sooji Halwa is ready and transfer to serving dish.


- Garnish with dry fruits before serving and also discard bay leaf and cardamom.
